The $15 per month "Chef's Special" level: you get one FREE merch item bi-annually AND one FREE "Forensic Filets: Crime Scene Cookbook" which is published bi-annually as well as all the benefits of the "Midnight Snacks" level.Forensic Filets | The #1 True Crime Cooking Podcast | Patreon FONDANT POTATOES INGREDIENTS:8-10 small/medium Yukon gold potatoes (peeled)½ teaspoon sea salt¼ teaspoon freshly cracked black pepper2 tablespoons avocado oil3 tablespoons unsalted butter3 cloves garlic (peeled)2 sprigs fresh thyme1 sprig fresh rosemary1 cup vegetable brothFlaky sea salt (for serving) FONDANT POTATOES INSTRUCTIONS:- Peel the potatoes. Trim the ends so they are flat, then cut each potato in half crosswise. You should now have 10 flat potato rounds. Place the potatoes in a large bowl and cover with cold water and let sit for 30 minutes.- Preheat the oven to 400°F and arrange the rack in the middle of the oven.- Drain the potatoes, rinse with cold water, and pat dry with paper towels. Place them in a dry large bowl and season with the kosher salt, black pepper, paprika, and onion powder.- Add 2 tablespoons of oil to a large cast-iron pan over medium-high heat. Once the oil is hot, add the potatoes cut-side down in a single layer. Cook until golden brown, about 6 to 7 minutes, flip and cook for 5 more minutes- Mix the garlic, butter, and 4 sprigs thyme, and 4 sprigs rosemary. Add mixture to potatoes in skillet. Stir and cook until the butter is foaming 2 minutes.- Add the broth, stir gently.- Transfer the cast iron skillet to the oven. Bake about 30 to 35 minutes (until potatoes are fork tender).- Garnish with more fresh thyme and rosemary sprigs before serving, drizzle with the pan juices, and sprinkle parsley on top.
