Flatbread Pizza Crust Carries Good Things

Crust. That word conjures up all kinds of imagery and thoughts. The Earth’s crust. A pie crust.

My favorite image of crust is a flatbread pizza crust.

The crust on any pizza is a foundation. Just like the Earth’s crust which carries civilization, pizza crust is the carrier of toppings.

You could cook all your pizza ingredients, plop them in a bowl and call it a day. Pizza bowl actually does sound super good.

But pizza is truly no fun without the crunch of a tasty flatbread crust. Flatbread pizza dough has no yeast which means it comes together quickly and you don’t have to twiddle your thumbs while the dough rises.It also means flat and crunchy because there’s no yeast to give the dough a lift.

Flatbreads have always been a big part of cultures and diets.Centuries ago Persian soldiers cooked flatbreads on their shields which they topped with cheese and dates.

My flatbread dough recipe is simple and easy enough to make on a weeknight.

No warrior shield necessary.Don’t ring a take out or delivery pizza joint.

Top Your Flatbread Pizza Crust with Anything You Have In Your Pantry

I bet right now you already have a handful of ingredients in your pantry that you can top your pizza with. Some of my favorites are garlic, pepperoni, jalapeños, and olives.

No pizza sauce on hand? No problem!

You can make a quick pizza sauce using fresh tomatoes or even use a BBQ sauce.

 Or, no sauce at all. I like to drizzle my flatbread pizza sans sauce with a balsamic reduction.

Consider flatbread pizza dough to be your chance to mix and match the flavors and textures you love on your pizza.

You can even put pineapple on your pizza if that floats your boat, although I would never. But that’s a conversation for another day.

Flatbread Pizza Dough

Make this easy flatbread pizza dough to satisfy your craving for pizza. It’s easy enough for a weeknight and bakes up in 8-10 minutes.

Ingredients

Units
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon Kosher salt
  • 1/2 tablespoon olive oil
  • 1/2 cup warm water

Instructions

  1. Heat your oven to 500˚ F.
  2. If you’re using a pizza stone, place it in the oven to heat with the oven. If you’re not using a pizza stone, prep the pan you will use to bake your pizza on, e.g., spritz it with olive oil; lightly coat it with cornmeal; lay a sheet of parchment paper on it.
  3. In a large bowl, whisk together the flour, Italian seasoning, and the salt.
  4. Add the olive oil and the warm water.
  5. Swirl one of your hands through the dough gathering together the flour mixture, olive oil, and water. Increase the pressure as you go and occasionally give the dough a squeeze to permeate the water throughout the dough. The resulting dough ball should feel pliable with a texture a bit like scotch tape that has lost its stickiness.
    • If your dough feels “sandy”, run your hand under the tap, shake off the excess water and continue working the dough until you have achieved the proper texture.
    • If your dough is sticky like Elmer’s glue, add additional flour until you have achieved the proper texture.
    • If your dough has the perfect texture right way, high-five!
  6. Cover the dough with a towel.
  7. Let the dough rest at least 10 minutes.
  8. Divide your dough into two portions.
  9. Working with one portion of the dough, roll the dough as thin as possible.
  10. Transfer your dough to your pizza stone (remove your hot stone from the oven or assemble your pizza on a pizza peel to slide it onto the stone) or pizza pan and top it with whatever your heart desires. (Please don’t tell us if you put pineapple on top.)
  11. Top your pizza with sauce, cheese, and toppings to make your tastebuds dance.
  12. Bake your pizza for 8-10 minutes; or until the crust is brown and crispy and the cheese is melted.

Notes

  • Make my delicious, simple pizza sauce.
  • This recipe makes two 12-inch pizzas or one ginormous pizza.
  • The key is to roll the pizza crust as thin as possible.
  • You can freeze the other half of your dough if you only make one pizza – yay! pizza anytime, just defrost the dough and you’re good to go.
  • You can wrap the dough in cling film and store it in the refrigerator to be baked in the next couple of days.
