Fresh Grilled Tomato Pie

from The 60-Second Food Schmooze · host Connecticut Public Radio

Grilled Tomato Pie: It’s easy and luscious. Bake a pre-made store-bought pie shell, and while it cooks, cut local tomatoes in half across the equator and grill them about 5 minutes per side. When they’re nicely browned, chop them up and put them in a bowl with salt and pepper and diced garlic, basil and scallions. Put the mixture in the baked pie shell and top it with lots of freshly grated parmesan cheese. Aside from a super-simple tomato sandwich (basic white bread, a little mayo, a shake of salt) this "pie" is the best use of ripe, gorgeous, local tomatoes. Make it right now.
