Sweet, spicy, and unapologetically glossy, it’s the kind of meal that turns a regular weeknight into a celebration.Ingredients* 1½ lbs boneless chicken thighs, cut into bite-size pieces* 1 egg* ½ cup cornstarch* ½ tsp salt* ½ tsp pepper* Vegetable oil for fryingSauce* 3 tbsp soy sauce* 2 tbsp rice vinegar* 3 tbsp brown sugar* 2 tbsp hoisin sauce* 1 tsp sesame oil* 1 tbsp cornstarch mixed with 2 tbsp water (slurry)* 2 cloves garlic, minced* 1 tbsp grated ginger* ½ tsp red chilli flakes (optional)Directions* In a bowl, whisk the egg, salt, and pepper. Add chicken pieces and toss well. Dredge lightly in cornstarch.* Heat 1 inch of oil in a wok or deep pan. Fry the chicken in batches until golden brown and crisp. Drain on paper towels.* In a clean wok, heat 1 tbsp oil and add garlic, ginger, and chilli flakes. Stir for 30 seconds.* Whisk together the sauce ingredients (except the slurry), then pour into the wok. Bring to a gentle simmer.* Stir in the cornstarch slurry to thicken the sauce, then return chicken to the wok and toss until coated and glossy.* Sprinkle with sesame seeds or chopped scallions.
