Transcript [Music] This is Food Safety in a Minute, I’m Susie Craig. Can Splenda® be used in home food preservation? The answer depends on the product being preserved. Splenda® can be used to sweeten liquids for canned fruits, but unlike sugar, it does not provide preservative benefits or help maintain color and texture. In traditional preserves and pickled fruits that rely on high sugar levels for safety and quality, Splenda® should not replace sugar. For jams and jellies, Splenda® may be used only with pectins specifically formulated for low- or no-sugar recipes. It should not be substituted for sugar in recipes using regular pectin or traditional long-boil methods. Following tested recipes is essential for food safety.
