流言：有传言说，辐照杀菌会损害食物中的营养，是真的吗？真相：辐照的穿透力强，且辐照剂量低、不会造成食品自身的温度的变化，因此研究已表明辐照前后食品中相对稳定的蛋白质、人体必需的氨基酸、碳水化合物、脂肪、矿物质、微量元素基本保持不变。但是维生素的稳定性相对较差，维生素 A、B1、C、和 E 对辐照相对敏感，较易分解，但是此类维生素更不耐热，因此相对于热灭菌，辐照处理的食品维生素维持得更好。总的来看，已趋于成熟的食品辐照技术并不会对食品安全产生威胁，也不会损失食品本身的口感和营养价值，大可不必谈“辐”色变！
