I got to spend my lunch break with Matt Hinckley, the owner of Hinckley's Fancy Meats.  A Sandwich and Charcuterie shop in East End Market that offers a deli counter of pâté, cured meats and sausages and whatever other delights this snout to tail butcher can create.   Matt and I discussed his time working in these amazing kitchens and restaurants around the country and his decision to come back home and bring some of those flavors and those quality ingredients in the form of sandwiches, charcuterie and pâtés.  We discussed everything from how he started to misconceived ideas people may have when you are creating and providing certain foods.   Lunch with Biggie is an Orlando podcast about small business and creatives sharing their stories and inspiring you to pursue your passion, with some sandwich talk on the side.
