While other distillers might climate-control their aging facilities to mimic Kentucky or Tennessee conditions, Ray insists on embracing Florida's humidity and temperature: "I want to taste Florida whiskey, and if we're going to make Florida whiskey and Florida rum a thing, it needs to be that."Their dedication extends to every detail—from crafting their own cola and ginger beer rather than settling for commercial mixers, to incorporating a piece of silver from the actual 1715 Spanish shipwreck into their Treasure Fleet rum.
