Shelby is an Iowa farm kid with a Master's degree in International Finance from Trinity College Dublin who came home and started farming crickets for human consumption. We had a great time talking to her about cricket stampedes, why bugs are great, how to get past the fear of legs in your teeth, and why women will eat anything.
