Shelby is an Iowa farm kid with a Master's degree in International Finance from Trinity College Dublin who came home and started farming crickets for human consumption. We had a great time talking to her about cricket stampedes, why bugs are great, how to get past the fear of legs in your teeth, and why women will eat anything. Shelby's 100% USA raised and processed roasted crickets, cricket bars, and cricket powder can be found in grocery stores and specialty stores around the country, as well as at her website.
