Water is a vital resource, especially on the farm fields that grow our food. Much of Colorado's food is grown in the San Luis Valley, a high desert that receives less than 7" of water annually, but sits on top of a gigantic aquifer. Across the Great Plains of the Midwest, many farm communities face dwindling water supplies. In the San Luis Valley, that spurred farmers to take up a bold experiment.
