I got to spend a long lunch break and catch up with Jim Graziano of J.P. Graziano Grocery Co. in Chicago, IL. An Italian Wholesale/Grocery that has been a long running Italian market and sandwich shop offering subs & specialty food items since 1937. They also have been giving people an opportunity to Taste Real Chicago During my conversation with Jim we discussed how his families business started as an Italian wholesaler and grocery and the decisions he made when he decided to take it over and add authentic Italian Subs made with the absolute freshest and best ingredients as part of the business. We also discussed how he decided to bottle up some of the family recipes and make it available for all to enjoy with Taste Real Chicago. The importance of collaboration and taking a chance and learning to Fail Forward. I met Jim and have formed a friendship over an Italian Sub he made me while on a 1 day Chicago Sandwich Eating Tour I did in in 2013.
