Dans cette troisième partie, on arrive au cœur de l'histoire de Nicolas Adam. Celle d'un chef qui reprend une institution, la fait sienne et ne s'arrête plus.La passation avec l'ancien chef et propriétaire se fait en dix minutes, les clés remises, le nom effacé du menu. Les premiers temps sont rudes. Les habitués s'attendaient à l'ancien, ils découvrent un inconnu. Mais la cuisine s'affirme vite et le chiffre d'affaires progresse. Alain Passard débarque un soir, pas très content, repart conquis. L'étoile tombe deux ans plus tard. Il fait un lapsus en l'annonçant à sa mère par téléphone : "c'est un gosse de rêve". Ça dure depuis 24 ans.Puis vient Portland. Pas en Oregon cette fois-ci mais sur le port de Plérin, à deux kilomètres de la Vieille Tour. Une boulangerie-pâtisserie, trattoria, coffee shop, un lieu de vie ouvert le soir avec des DJ et des boules à facettes l'été. Sept cents personnes, toutes générations confondues, sans aucune communication. Onze ans d'avance sur ce qui se fait aujourd'hui dans les grandes villes.Et puis Rock'n Toques, l'événement qu'il a cofondé il y a dix-huit ans au cœur du festival Art Rock pour que les festivaliers mangent enfin bien.
