KOVAL Distillery: Dr. Sonat Birnecker Hart

This week we welcome Dr. Sonat Birnecker Hart, Founder and President of KOVAL Distillery, one of the largest independent and female-owned craft distilleries in the US! She talks us through what it took to distill whiskey in Chicago for the first time since prohibition. How her and her husband Dr. Robert Birnecker started KOVAL and how they built their business from the ground up, leaving her job in academia to follow her whiskey dreams. She is truly an inspiration in the field and it was an absolute pleasure picking her brain and sampling her delicious spirits!
