“E poi c’è anche la barbabietola da zucchero…”. Questa frase ha salvato diverse interrogazioni di geografia alle elementari, quando c’era un vuoto di memoria sulle coltivazioni di una regione… perché nel recente passato la bieticoltura in Italia superava abbondantemente i 200mila ettari e c’erano una ventina di zuccherifici. Poi una serie di riforme europee ha portato a una drastica razionalizzazione. E oggi la barbabietola – una coltura decisamente brillante dal punto di vista ambientale - si coltiva su 30 mila ettari in sette regioni, con un unico player nazionale e due zuccherifici. La novità è che quest’anno c’è stato un boom delle semine del 30%, complici le ottime quotazioni, ed entro il 2025 lo zucchero made in Italy sarà tutto certificato biologico o da agricoltura integrata. Ne parliamo con Claudio Gallerani presidente di Coprob-Italia Zuccheri. Dallo zucchero al sale. Un po’ per contrasto, ma anche perché la salicoltura, la coltivazione del sale marino ha diverse caratteristiche che la avvicinano all’agricoltura. Tanto che dal 2019 la Francia ha inserito la saliculture nelle attività agricole nazionali. Una linea già seguita dalla Sicilia e che potrebbe essere adottata anche dall’Italia.
