Josh Ruxin and his wife moved to Rwanda eight years ago when he spearheaded an effort to create a model program to alleviate that nation's rural poverty. When it became clear that he and his wife would be staying longer than they'd originally intended, his wife drew up plans to open a restaurant in the capital city of Kigali.
