Lumpia Shanghai with Iris

Iris and I met several years back while volunteering together through Mental Health America of Central Carolinas and the American Foundation for Suicide Prevention; over the years we grew to be close friends. She is so fun to spend time with, and rolling lumpia with her was an absolute treat! We did not have any kitchen disasters, thankfully! Iris told me all about her family traditions and why she considers lumpia a "labor of love."
