Episode 8 - Margaritas in Mexico, Part I - Coconut MargaritaCarli and Diana travel to San Jose Del Cabo and start the trip off right at the pool bar with Papa Doug. The week-long party celebrating Fiesta de San Jose included parades, a downtown art walk, breakfast at the La Comer grocery, and plenty of whale sightings. Diana makes a Coconut Margarita for the group and we discover we prefer sugar over salt. Coconut MargaritaIngredientsshredded coconut for the rim2 oz tequila1 oz coconut rum1 oz fresh lime juice1 oz cream of coconut1 lime wheelPreparationWet the rim of a tumbler and dip it into the shredded coconut. Place the cocktail ingredients in a cocktail shaker filled with ice and shake vigorously. Fill the glass with ice and strain the cocktail into the glass.Garnish with the lime wheel.
