Memorial Day Delight: Healthy Apple Crisp and Patriotic Parfait

Join Fitness Chef Christine as she celebrates Memorial Day with a healthier twist on classic American apple pie by making a delicious apple crisp with oatmeal, followed by a festive red, white, and blue yogurt parfait. Healthy Apple Crisp with Oatmeal Ingredients: 1 cup old fashioned oats 1 cup dark coconut sugar (or regular brown sugar) 2 teaspoons cinnamon Dash of nutmeg 1 cup all-purpose flour (preferably King Arthur Unbleached Unbromated Flour) 1 stick butter, melted and slightly cooled 7 apples (a mix of Pink Lady, Granny Smith, and Honeycrisp) ½ cup date sugar (or other alternative sugar) Extra cinnamon for sprinkling Instructions: Prepare the Topping: In a bowl, combine the oats, sugar, cinnamon, nutmeg, and flour. Make a well in the center and pour in the melted butter. Toss the mixture together until well combined and clumpy. Add more melted butter if needed. Set the topping aside to cool. Prepare the Apples: Peel and core the apples using an apple peeler or a knife. Slice the apples and place them in a large bowl. Add the sugar and a sprinkle of cinnamon to the apples, mixing well. Assemble the Crisp: Preheat the oven to 350°F (175°C). Spread the apple mixture evenly in a baking dish. Sprinkle the oat topping over the apples, pressing it down slightly. Bake in the preheated oven for about 45 minutes, or until the topping is golden brown and the apples are tender and bubbly. Serve: Allow the apple crisp to cool slightly before serving. Optional: Top with whipped cream or sweetened Greek yogurt. Ingredients: Greek yogurt Raspberries (about 10) Chia seeds Fresh blueberries Honey (about 2 tablespoons) Optional toppings: sliced coconut, nuts Instructions: Prepare the Yogurt: In a bowl, mix Greek yogurt with honey until well combined. Prepare the Raspberry Puree: Mash the raspberries with a fork until smooth. Pass through a sieve if you want to remove the seeds. Add a small handful of chia seeds to the raspberry puree and let it sit to thicken. Assemble the Parfait: In a glass or cup, layer the sweetened yogurt, raspberry puree, and fresh blueberries. Repeat the layers until the glass is filled. Top with additional blueberries and any optional toppings you prefer. Serve: Enjoy immediately or refrigerate until ready to serve.
