This week, we are talking about something out of the blue. Bananas! What do you call a hanging bunch of bananas? I would say a hanging bunch! But the exciting thing is, our bunch is hanging from one of our banana trees in the gardens. See image. Adrianne, our gardener, has been trying to grow bananas for a couple of years now, without joy unfortunately. Mainly due to the high winds we can get which blows the banana trees over, snapping of the bunch of bananas. However, we are hoping this year is our year! So getting ready is Hazel, my eldest who has already written a recipe in anticipation! She's a pretty good cook, so I hope you enjoy them. P.S- if you don't have a banana tree growing in the garden you can simply just buy them. Mashed banana and honey pikelets 2 cups plain flour 2 tsp baking powder 1/2 tsp salt 3 bananas, peeled and smashed 2 eggs 1 1/2 cups milk 1 tbsp honey 2 tbsp grapeseed oil Honey for drizzling Sift the flour along with the baking powder and salt into a bowl. In another bowl whisk the milk along with the eggs and honey. Pour the milk mixture into the flour mix and whisk till smooth. Add in the mashed banana and mix until well incorporated. Heat a cast iron pan and add in a touch of oil and roll it around the pan. Drop in two tablespoons of batter. Turning when bubbles start to show on the top. Cook the second side until golden.
