Since they have focused on mixology and advanced mixology techniques, they are able to use many non-traditional ingredients in making drinks. This includes wine, sugar alternatives, acid alternatives, and alcohol alternatives. This allows people to have a much different conversation about health and cocktails (or culinary drinks).
