MMM Meatloaf - Kim's Recipe

Kim's Mmm-Mmm Meatloaf Ingredients: 1 lb meatloaf mix (or, 1/3 each beef, pork, and veal mixed together if you can't find it) ½ onion, diced 1 large or extra large egg Garlic salt Onion salt Black pepper Oregano Parsley Pecorino/Romano cheese; I prefer the Locatelli brand. (grated into a powder form) Italian style bread crumbs Deli sliced american cheese; I prefer Cooper Sharp American 2 cans Cream of Mushroom soup (brand doesn't matter) Place meat, onion, and egg in a large bowl Add the spices and Locatelli. I don’t have measurements, I just surface dust it. Be careful with the salts....they come out fast and you don’t want to over salt JUST A DUSTING Add a healthy dose of the bread crumbs. Better to add more later if you need it. Mix everything just like you would for meatballs. Incorporate but don’t overmix. Add more until the texture when you squeeze a handful JUST sticks together. Shape the meatloaf into a wide oval and place in a casserole dish. Gently Karate chop down the middle so there’s a bit of a dent. Place the American cheese slices (from side to side) on top of the meatloaf. I usually end up using 4 slices, SLIGHTLY overlapping. Basically enough to cover the top. Spoon soup on top. Spread the soup with the back of a spoon. I usually leave more on top, then spread what falls over the side to kind of cover it all around. It’ll be a thinner layer on the sides, obviously Tear off 2 VERY LONG pieces of foil. Like it runs from the back of your stove top to about half way down the oven door. Put them side by side, a little overlapped in the middle. Place the casserole dish on top of the foil, so the long part of the foil is on the SIDES of the dish, not the ends. Pull the edges of the foil up and over the dish. Fold the top edge down about an inch, then down another inch, and then one more if it’s long enough. (kind of like how you roll down a lunch bag). You want the foil to leave room at the top of the meatloaf so the air can circulate. Fold up the sides to close around the ends of the dish. Pop the whole thing in the oven. You can do 350 for ½ hours OR 375 for 1 hour, 10 minutes. Let it rest for about 10-15 minutes before slicing.
