Mutfaktan Sesler’in yeni özel serisi Ekmeğin Hikayesi devam ediyor. Bu bölümde konuğumuz MSA Eğitmen Şefi Tuğba Taştekin Alhan. Hem Profesyonel Pastacılık hem de Profesyonel Ekmekçilik ve Fırıncılık bölümlerinde ders veren Tuğba Şef’le bir meslek olarak ekmekçiliği, fırıncılığı, bu zanaatın gastronomi dünyasındaki rolünü, mesleğin dönüşen dinamiklerini konuştuk. Çuval çuval unla çalışan, herkesten erken uyanan fırıncıların mesleğini, MSA’nın Ekmekçilik ve Fırıncılık öğrencilerinin motivasyonlarını, bu meslekte alaylı olmakla okullu olmanın farkını, Türkiye’de artizan ekmekçiliğin yükselişinin getirdiği kültürel dönüşümü ele aldık. Sağlıklı ve temiz beslenme bilinci arttıkça en temel gıda olan ekmeği endüstriyel, markalaşmış seçeneklerden almaktansa mahallenizde üretim yapan birinden almanın güzelliğine değindik. Hamurun davranışını anlamanın çoğu zaman kitap bilgisinden daha bile fazla sezgi gerektirdiğine hemfikir olduk, Tuğba Şef’ten bir de “hamurkâr” terimini öğrendik. Sofralarımıza gelen düşük mayalı, uzun fermente edilmiş, tertemiz unlu ekmekler için her gün aynı motivasyonla çalışan fırıncıların hepsine teşekkürlerimizi sunduk.
