He has worked around the world, helped and advised many of our current distilleries to get started, educated many of the distillers currently working in the whiskey industry through his teaching with the Institute of Brewing and Distilling and also found time to be a past president of the Irish Whiskey Society. I am skipping over alot of his career....... I've been looking forward to sitting and chatting with Jack for a couple of years now and we finally made it happen....... inside the ancient 'keep' that sits proudly alongside the reception of the hotel.
