On the northern edge of the Black Isle, half an hour from Inverness, Newhall Mains is an 18th-century farm steading built around a sandstone courtyard - the "Mains" being the old Scottish word for the working heart of an estate. Not long ago it sat on the buildings-at-risk register, roofless and close to being lost for good. In today's episode, Molly sits down with founder Euan Ramsay, who left a London hospitality career to come home and bring the derelict family steading back to life. Rebuilt by Highland craftsmen in stone, lime and slate, it reopened in 2021 as a comfortable boutique hotel - one with a private airstrip, so guests can quite literally fly in.
