酸味的特殊，从感知过程就和其他味道不一样。研究者发现，与酸味受体OTOP1相关的基因广泛存在于脊椎动物和无脊椎动物中，最早的脊椎动物可能已经具备检测酸性物质的能力。这意味着感知酸味的能力，至少与脊椎动物一样古老了。
