Shari had the pleasure of dining solo at Alouette a few days before this in-person interview in late May. MAD is led by founder Rene Redzepi of Noma and team, and this year's theme was "Build to Last." Shari also took part in Spora Forum on "The Future of Food," the inaugural event at Spora, a global research center applying science to the pursuit of sustainable deliciousness, founded by Rasmus Munk of Alchemist (episode #391); launching the Spora Network.
