Onion chopped1 1/2 tsp Garlic powder1 Tbsp avocado oil2 cans great northern beans, rinsed and drained1 can (14 1/2 oz.) chicken broth1 can of 7 oz. green chili1 tsp each of Salt, Cumin and Dried Oregano1/2 tsp pepper1 cup Sour cream1/2 cup Whipping Cream4 Tbsp butter for the rue4 Tbsp flour for the rueIn a large saucepan saute chicken, onion and garlic powder in oil until chicken is no longer pink. Add beans, broth, chilies, corn and seasonings. Bring to a boil. Reduce heat, simmer, uncovered for 30 minutes. Optional Add 4 tbsp butter to melt in the pot. Remove from heat. Stir in Sour cream and cream. In a little pan melt butter and add flour to make the rue. Turn the heat back on under the soup.
