Over the past decade, Melbourne's Bourke Street hill has slowly morphed into a vibrant Thai Town. The originator is Thai Tide, a dynamic restaurant which has changed menu direction a number of times in its 11-year history. The chef for all that time has been Nutchanun Thongsawat.
