Nutrition Nuggets 31. Are Mushrooms Vegetables?
from My Wife the Dietitian · host My Wife the Dietitian
Existing for millions of years, the marvelous mushroom is a plant with large, fruiting bodies that can be eaten in a variety of different ways. With characteristically low calories, low sodium and no cholesterol, this vegetable is the only plant food in the produce aisle that can offer vitamin D for people who eat them. Mycologists (scientists who study mushrooms), discovered that if UV rays are directed at mushrooms, they will produce more vitamin D, similar to human skin. Join Rob and Sandra for some interesting and delicious facts about these fungi :) Enjoying the show?
