Oleocanthal: the olive compound that works like ibuprofen

Extra virgin olive oil's throat-burning sensation comes from oleocanthal, which inhibits COX-1 and COX-2 at the same receptor site as ibuprofen. The "throat sting" is literally a pharmacological signal of anti-inflammatory activity. The stronger the burn, the more oleocanthal.
