On reçoit cette semaine dans le podcast Wilfried Romain, chef du restaurant Lava dans le 5e arrondissement de Paris.Dans cette troisième et dernière partie, Wilfried revient sur le Chili et son passage chez Borago, alors classé parmi les meilleurs restaurants du monde : le rapport théâtral au service, la découverte des produits endémiques du Chili et cette cuisine qui raconte le territoire. Puis le voyage en sac à dos avec sa compagne et cette conviction d'avoir eu la chance de naître en France.Vient ensuite Top Chef, vécu presque par hasard après avoir démarré comme simple remplaçant, la découverte des plateaux de tournage et des rencontres qui comptent encore aujourd'hui. À la sortie du concours, deux à trois années de doute et de petits boulots de chef privé, avant l'ouverture de son restaurant Lava en mars 2024, marquée par une association ratée et un début très fragile financièrement. Wilfried raconte comment Taste of Paris 2025 a été le déclic qui a soudé son équipe et relancé le restaurant, jusqu'aux récentes récompenses.
