Orehov nadev za potico

Poslušalka je vprašala, kako naj pripravi orehov nadev. Sestra Nikolina je odgovorila, da za potico iz ¾ kg moke naredimo nadev iz ½ kg zmletih orehov. Dodamo 2 dl mleka ali sladke smetane, 8 dag masla, 10-15 dag sladkorje. Vse sestavine damo v kozico in skuhamo, dodamo še žlico krušnih drobtin. Mešamo z metlico ali lopatko in pokuhamo. Vre naj 3-5 minut. Rumenjake (tri ali štiri) smo dali v testo, iz beljakov pa naredimo sneg. Dodamo še malo cimeta in 1-2 vanilijeva sladkorja ter 10 dag sladkorja. Preden bomo sneg umešali v testo, mu dodamo še 4 žlice ruma. Sneg mešamo v večjih obratih z metlico v roki, da dobimo rahlo maso. Če je potrebno, počasi prilivamo mleko ali pravo kavo, da je nadev bolj mazav. Posebej v rumu namočimo rozine, da so sočne in prijetno tople. Nadev nanesemo na razvaljano testo, potresemo rozine, še posebej jih naložimo na začetek, kjer začnemo ovijati. Ovijamo s prsti, ne nategujemo, pa vendar tesno zavijemo vse do kraja. Zavitek postavimo v pekač, namažemo z jajcem in postavimo v pečico. Nato jo priključimo na 180 – 190 stopinj Celzija. Pečemo slabo uro. Ko potica dobi lepo barvo, temperaturo zmanjšamo, po potrebi pa potico pokrijemo s peki papirjem, alu-folijo ali pekačem. Drugo poslušalko je zanimalo, ali da sneg v vroč nadev ali naj počaka, da se ohladi. Sestra je odgovorila, da ko je nadev skuhan, ga odstavimo, naredimo sneg (dobro je, da ne stoji) in ga lahko že zamešamo.
