🥖 Dans ce nouvel épisode de Parlons Pain, je vous emmène à Marseille, à la rencontre de Guillaume Tétu, cofondateur de Ferments à Marseille.✨ Guillaume découvre la boulangerie à dix-neuf ans, presque par hasard, après une rencontre avec un formateur à Paris. Rien ne le prédestinait vraiment à ce métier, et pourtant, quatorze ans plus tard, la farine, le levain et le fournil sont devenus le fil rouge de son parcours.🚪 Après avoir candidaté dans de nombreuses boulangeries parisiennes sans succès, il finit par trouver une place chez Maison Landemaine, en 2013. C’est là que commence réellement son apprentissage, avant de poursuivre son chemin entre pain au levain, viennoiserie, notamment deux ans au Grenier à Pain, et une expérience fondatrice chez Atelier P1, dans le 18e arrondissement de Paris.🤝 C’est chez Atelier P1 qu’il rencontre Mati, son futur associé. Ensemble, ils imaginent puis fondent Ferment, à Marseille, une boulangerie café ouverte le 22 décembre 2022, avec seulement eux deux en production au lancement.📈 Dès le premier jour, la boutique réalise 500 euros de chiffre d’affaires. Aujourd’hui, Ferments réunit une équipe de plus de dix collaborateurs, participe chaque semaine au marché du Vieux-Port, et continue de grandir sans renier son idée de départ : faire les meilleurs produits possibles, respecter les équipes, les accompagner et les faire progresser.🌱 Dans cet épisode, Guillaume revient sur la construction progressive de son identité artisanale, son rapport au levain, à la viennoiserie, au café, mais aussi sur les choix très concrets qui façonnent Ferment au quotidien notamment son association avec un paysan-meunier.🏭 Pourquoi avoir volontairement conçu un laboratoire capable de fonctionner en dessous de sa capacité maximale, plutôt que de chercher à produire toujours plus ?
