Dans cet épisode de Parlons Pain, je vous emmène à Monaco à la rencontre de Thomas Subrin, Meilleur Ouvrier de France boulanger, chef boulanger de la Société des Bains de Mer et fondateur de Pita Formation.🥖 Originaire du Beaujolais, Thomas découvre la boulangerie au lycée François Rabelais, à Dardilly. Novice au départ, il se passionne très vite pour le pain et a envie d’apprendre toujours plus.🌍 À 18 ans, sa première expérience professionnelle l’emmène au Bénin, à Cotonou, pour former une équipe locale à la boulangerie française. Une aventure fondatrice, autant humaine que professionnelle, qui marque profondément sa manière de transmettre, de travailler et de regarder le métier.🏔️ Après des expériences en artisanat, en saison à Val-d’Isère, Thomas enchaîne en hôtellerie à Monaco, auprès des équipes de Joël Robuchon. Il poursuit ensuite son chemin avec les concours : Coupe de France, Coupe du Monde, puis Meilleur Ouvrier de France, un titre qu’il décroche en 2018 après une préparation intense et loin des conditions idéales.👨‍🍳 Aujourd’hui, il dirige une équipe d’une vingtaine de boulangers et touriers pour la Société des Bains de Mer à Monaco, où il fournit pains et viennoiseries aux hôtels et restaurants du groupe. Un poste qui l’amène à défendre la place du boulanger dans l’hôtellerie : proposer, dialoguer avec les chefs, comprendre leurs contraintes, mais aussi faire entendre celles du pain, de la fermentation, des farines et du goût.🤝 Dans cet épisode, Thomas parle aussi de transmission. Avec PITA Formation, il accompagne artisans, écoles et professionnels en France comme à l’étranger, avec une approche sur mesure nourrie par son parcours : concours, hôtellerie, artisanat, viennoiserie, pain au levain et produits de partage.🌾 Enfin, Thomas nous raconte son nouveau projet : l’ouverture d’une boulangerie à Charnay, dans le Beaujolais, près de ses racines familiales.
