Freschi in insalate, cucinati in piatti prelibati o trasformati in bevande, salse e marmellate. Si chiamano fiori eduli e non sono una moda passeggera. Non tutti i fiori però sono eduli. Per fare la lista dei buoni si è mossa la ricerca, con l’Italia in prima fila per la sua vocazione floricola. Un nutrito manipolo di produttori si è prestato alla svolta e la nicchia si rafforza. Con i consumatori sempre più curiosi e attratti da un prodotto storicamente ornamentale, già bellissimo, che ora aggiunge al suo fascino un'altra sfera sensoriale, quella del gusto, che in Italia ha sempre un grande potere. Naturalmente protagonista del nuovo trend anche un esercito di chef praticamente scatenati. Con ricette floreali come il cappuccino di zucca ai fiori di escolzia, il burro ai fiori di begonia, il pesto di viola, la crema di lavanda in vasetto di cioccolato.
