Le comble de l'optimisme, c'est de rentrer dans un grand restaurant et compter sur la perle qu'on trouvera dans une huître pour payer la note (Tristan Bernard,Ecrivain Français) C’est en 1921, à un jet de pierre de la Grand Place et au cœur de l’Îlot Sacré, que Calixte Veulemans ouvrait le restaurant Aux Armes de Bruxelles. C’est dans celui-ci que , pour la première fois, les moules furent servies en casserole. Fort d’une expérience au sein du restaurant « Chez Léon » (Un établissement situé juste en face de « Aux Armes de Bruxelles ») Rudy Vanlancker reprit ce restaurant de la capitale en 2018.
