According to Quora.com: When slavery was abolished in the US, it somehow coincidentally (it was not a coincidence) happened that all the positions taken by freed black people somehow became tipped positions. This allowed white people in the South to basically not pay black people for their work while still pretending it was because the service was not up to par. Tipped positions are traditionally black position: waiter, bell-boy, porter, hotel maid. These people are paid extremely low base salaries and the rest of their pay is at the whim of the customer.
