Raspberry Walnut Vinaigrette Capture The Brightness and Energy of Spring Raspberry Walnut Vinaigrette. Spring is here and new life is blossoming, awakening us to happier moods, increased energy, and a desire to eat more fresh meals with vibrant-colored fruits and vegetables. My mission is to help you answer the most important question of the day, “What’s for dinner?”. One way to to do this is to take advantage of the beautiful berries we’re beginning to see in the grocery store. Capture the brightness and energy of spring with a raspberry walnut vinaigrette. Thanks To The Greeks and Romans For The First Vinaigrette Oh, the wonderful vinaigrette. We have the Greeks and Romans to thank for, being the first to add salt, vinegar, and oil to vegetables. The beauty of this palate pleasing combination is that you can transform the base of olive oil and vinegar into any flavor you’re craving. Spice it up with jalapeno, add Asian flavors like soy and ginger. Or sweeten it with fruit. That brings me to the divine delight which is the raspberry. The beautiful, ruby red raspberry balances the vinegar flavor and adds a multitude of vitamins and health benefits to your meal. The raspberry is an excellent source of vitamin C, manganese and fiber, and it has the highest concentration of antioxidant strength of all fruits. Its acid has known cancer-fighting compounds, and its oil helps protect the skin from sun damage. Wow.
