Chris Thé is a renowned Sydney pastry chef, formerly of Black Star Bakery and now Heart in Stanmore. But he almost didn’t become a chef, studying psychology instead. He tells Graeme Kemlo he gave up studying psychology because he was better at making people happy than making unhappy people better. It was a great decision he says to do an apprenticeship, graduate and then find a job with Timothy Pak Choy, who offered to teach him everything on the condition that he remained working with him for four years – effectively another apprenticeship.
