from Food and Farm · host Ray Bowman
In the aftermath of consternation and controversy over suggestions the FDA has taken steps to end the time-honored practice of aging cheese on wood surfaces, the agency has clarified their stance saying "...we have not and are not prohibiting or banning the long-standing practice of using wood shelving in artisanal cheese. We'l talk with Cornell's Rob Ralyea on Food and Farm for some context on how this issue got started and where (if anywhere) it might be headed.
