Let ferment to 1.02 or less one stopped at that for more than two weeks Rack to new vessel and continue to conditioning instructions. Make Tincture: Whipped Cream Vodka to cover spices in container of choice 1/2 nut of nutmeg 1 vanilla bean split open 2 allspice 1 clove Let sit for 1 to 2 weeks Secondary/ Conditioning. add tincture minus spices (Just the liquid, strain with cheese cloth or muslin) + 3/8 tsp vanilla extract Alternately could stabilize using potassium sorbate and campden tablet or pasturize wait a few weeks to bottle.
