As the daughter of an inventor, Caryn Hibbert left behind her childhood in the country to pursue a profession in science in London. There, she forged a formidable career in medicine and raised three children, until deciding to buy a manor house in the small village of Southrop, Gloucestershire, in 2002. Having quickly realised a manor house isn’t going to pay for itself, Thyme was born. Described as a “grown-up, elegant hotel all about country life”, Thyme has grown from just hotel rooms to a cookery school, a destination spa, a quintessentially British restaurant – and even has its own pub.
