Heat over medium heat, stirring until the sugar is completely dissolved. Remove from heat and let cool.Once the syrup is cool, add the fresh lemon juice. Stir to combine.Pour the mixture into a shallow dish and place it in the freezer. Stir the mixture every hour to break up ice crystals until fully frozen, about 4-5 hours.For a smoother texture, blend the frozen mixture in a food processor until smooth and creamy.
