She's always had a fascination with the United States and New York from watching TV in Australia.  When she visited  New York City for the first time, the Big Apple stole her heart and inspired her  dream to live there. Life happened, and while working a corporate job started a hospitality business that quickly blossomed to 5 locations.  They continue to manage the business from the U.S. Meanwhile she's started several new and completely different businesses in New York.
