Stop Storing Grains Wrong — How to Keep Wheat Berries Fresh for 25+ Years   If you are milling your own grain but storing it incorrectly, you could be losing freshness, flavor, nutrition, and even inviting bugs into your pantry. In this episode, Annette breaks down the best ways to store wheat berries and whole grains, from short term kitchen use to long term emergency storage. When stored properly, wheat berries can last decades and still bake beautifully.   Short Term and Everyday Grain Storage   For daily or weekly bakers, convenience and freshness matter most. Glass jars with tight sealing lids work best for short term storage up to three months. Keep them in a cool, dry cabinet away from heat and humidity. Fresh wheat should smell sweet and nutty. If it smells musty, it has absorbed moisture and should not be used.   Bulk and Medium Term Storage   If you buy grain in 25 or 50 pound bags, food grade five gallon buckets with tight sealing gamma lids offer strong protection. These buckets guard against light, moisture, and pests. For storage up to a year, this method keeps grains stable and safe. Oxygen absorbers can be added for extra protection but are not always required for shorter periods.   Long Term Storage for Years   For one to ten years or more, the gold standard is mylar bags inside sealed buckets with oxygen absorbers. This creates a full barrier against oxygen, light, moisture, and bugs. When stored in a cool environment between 45 and 70 degrees Fahrenheit, properly sealed grains can maintain quality for decades.   Preventing Bugs and Protecting Freshness   Always freeze new grain for 72 hours before storing to kill any hidden eggs. Never store grains in paper or thin plastic long term. Keep the area clean and dry, and consider adding bay leaves as a natural deterrent. Temperature control is critical.
