Crystyl Mo has been reporting on the world of restaurants in China for over twenty years, so she has borne witness to the phenomenal growth of the modern Chinese fine dining experience. Now, as an Academy Chair at The World's 50 Best Restaurants, she has also been able to contextualise China's culinary scene on the global stage, and she shares some of her insights in today's episode.
