Leftovers Meet Your Match: The Frittata Do you have leftovers in your pantry that you’re wondering how to use up? Consider the frittata. The French have their omelet, an elegant and delightful folded or rolled egg dish that Napoleon Bonaparte loved. And, in fact, once commanded an entire village be scoured for enough eggs to make omelets for his army. &nbsp; Thank the Italians for the Egg-ilicious Frittata But, the Italians gave us the frittata. Its name derives from an Italian verb which means to fry. I simply refer to it as fabulous. The technique for producing a tender, delicious frittata is much simpler to master than the omelet. It’s simply this: Throw whatever is leftover in your fridge into a sauté pan with some butter. Pour in some beaten eggs and cream, transfer the pan to the oven, and bake until the frittata is puffed and set in the middle. Easy peasy, and egg-ilicious. &nbsp; A Delicious Way to Use Up Leftovers In case you missed it, the most important instruction is this: Throw whatever you find in your fridge into the sauté pan. A list of likely ingredients can include, bell pepper, mushrooms, onion, spinach, zucchini, and really any other vegetable that suits your fancy. The frittata is a perfect vehicle for using up anything in your fridge. I rummaged through my fridge one Saturday morning and found half of a hamburger patty, cheese, lettuce, and some homemade lemon vinaigrette. Making creative use of leftovers is a virtue I admire. I tossed the greens with the vinaigrette and piled them on top of my finished cheeseburger frittata. The salad mix still had a bit of dill which added to my delight. Unfortunately, there was no side of fries, frosty root beer, or vanilla shake. Just coffee.
