Season with salt and pepper to taste.Add shredded kale to a large bowl. Pour in 1-2 tablespoons of the olive oil and massage the kale with your hands for 1-2 minutes until it softens. Add cooked quinoa, blueberries, pumpkin seeds, pistachios, chopped mint, avocado and feta cheese to the massaged kale.Top with grilled chicken slices. Drizzle remaining dressing over the salad and toss gently to combine.Serve immediately or refrigerate for up to three days. Add avocado before serving if prepped ahead.Crispy Peanut Butter BallsIngredients:½ cup natural peanut butter, almond butter or sunflower seed butter¾ cup crispy rice cereal1 teaspoon pure maple syrup½ cup dark chocolate chips, melted Instructions:Line a baking sheet with parchment or wax paper. Combine peanut butter, cereal and maple syrup in a medium bowl. Roll the mixture into 12 balls, using about 2 teaspoons for each. Place on the prepared baking sheet. Freeze the balls until firm, about 15 minutes.Roll the balls in melted chocolate.
