Dice potatoes, coat with olive oil, salt and pepper. Roast until fork tender. Mix diced onions, lemon juice, olive oil, garlic, nutritional yeast, mustard, red wine vinegar, herbs, and salt & pepper in a large bowl. Add cooked potatoes, coat thoroughly. Chocolate PB Dates IngredientsA few pitted dates1-2 teaspoons peanut butterDrizzle of honeySprinkle of shredded coconutA few chocolate chipsInstructions: Slice open all of the dates (and make sure there aren't any pits). Stuff each date with peanut butter. Drizzle honey on top of each date. Top the dates with coconut and chocolate chips. Place the baking sheet into the freezer for at least 20 minutes.
