I mean charcoal grill dope not an actual smoker But I'm using the snake method. I don't know if you ever looked it up. I don't know that is please explain Basically you just stack charcoal up against each other and like a snake Oh, I don't like and so you light one end and it slowly burns for the next several hours. So it's charcoal smoke.
Yes It's charcoal and then you basically put the put the Witch chips on top of the snake. Okay, so as the charcoal burns that the wood burns and create smoke throughout the soap the wood chips and water Yeah, I usually do I mean you only do it for like 15 minutes forehand. You're soaking in booze No, but this is where I was going with this my wife was like, okay You're getting the smoking after I smoke those ribs that turned out fucking delicious. She bought me um some oak barrel chips dude So from whiskey barrels, they do so they're whiskey.
I mean you open the bag it smells like booze I'm gonna look excited just talking about it. Yeah, I can't wait to try brisket with this So yeah, I've done ribs. We did chicken wings the other night and they're fucking amazing unbelievably. I got some pretty decent ribs on the fourth at Publix really yeah, I'm just gonna like the wings up.
Oh, it's a pretty good man. You got 10 for 20 for 10 They're not bad, but I don't know if you've ever had like the Walmart ribs which are adequate not good Not bad when I make when I want to make a Cuban sandwich. I buy a portend one from Walmart precooked Portend on hand Oh, yeah, that's a good idea on Cuban mustard pickle brilliant I see the sauce. Do you do the vinegar lemon sauce?
No, I just do mustard mustard pickle ham and pork and cheese No mojo sauce. No, I'm just press that fucker and eat it I'll just give me another idea and I will do that soon But I was you know like check out the deli section and and do just like holds out of hand with a single rib For you to try and he's like starts waving at me. It's kind of chicken I'm like, okay, eat it delicious. What did you do?

So they're drink socialize check every hour 30 minutes I'm like that's yeah, that's kind of brilliant No problems you smell delicious for like two days It's true and I still smell it's you and I'm like mom Mmm, so you're talking about the wings What do you like to do with the wings and I just put some I want a keto diet now, right? Yeah, me too So no barbecue sauce. See I always allow those sauces. I don't really care That's not a lot but anyways, so I was just doing a rub just a dry rub.
Yep, and uh basically the corn mains makes the best Stuff ever be dry rub my meat is that what you're laughing at yeah I take my meat and I pat it down my dry rub. Yeah, and then just let that sit for about 30 minutes while I'm getting the charcoal ready Give me time to absorb some that mm-hmm. I just like the smell charcoal. Yeah, just charcoal burning It's very exciting to me dude.
I'm telling you the snake method. It's my grill stays at 225 for like eight hours No way easily. I don't have to touch anything It just burns and stays of that degree like I keep going out check it like I'm fucking this up. Nope.
It's perfect So about doing some homework I'm gonna go brisket next I think I'm gonna go step it up. Oh you're going all in going all in they realize how expensive Oh, it's like 40 $50 and meat if I fucking out that's just 40 $50 down the drain Know what now what exactly what cut is brisket? It's cow. Yeah, but we'll cut it's cow.
Okay. I don't know I'm assuming it's like a prime rib or is it like a tender one? I'm assuming I'm assuming it's like a pork shoulder, but cow The size of it. Okay, because it's kind of like a flat blade.
I'm assuming some sort of shoulder cut. Okay. I don't know for sure Like a top sort of line of yeah, man. I wonder what a smoke tender one is like, you know, that's another thing I looked up I was like what if I bought like what if I went to yeah, what if I went to like a Cut and bought like you know how you can buy like filets flamingion.
Oh, yeah, you can buy like a backstrap Yeah, I was like what if I just smoke whole backstrap and then sure enough there's people and they're like yeah I have some backstrap and some whole sterling roast good. You can definitely get them at a hair steeder I don't know the they're only like 90 bucks I don't know if the flamingion be that much that good because you want something with a lot of fat and because it cooks So slow and long true like a sirloin roast. We need to slow cook to be probably pretty good, right? What do you think a dry out?
I think it would dry out gotcha because there's not enough fat. Okay, so my chicken breasts like Super dry when you smoke it, but usually it's slathered in barbecue sauce So you don't notice that's why you want to do dark meat dark meat wings thighs wings wings eyes legs Mm-hmm. Yeah, I just put it more sense. Yeah, because dark meat has more oil in it.
So it lasts longer And they were delicious, and I can't wait to smoke again this weekend coming up. Yeah, I think I'm gonna go brisket I've got a got a chicken recipe. That's so good I was thinking for a long time about opening a restaurant just based on this recipe There's like one place in Indiana that makes it And yeah, come after me go ahead Nelson's chicken of Wombash, Indiana makes the best motherfucking chicken you'll ever eat in your life And I'm not exaggerating. I guess depending on what cryo sleep actually is I don't know I guess you could just go up in space and go fast You know just open a spaceship but go fast.
